Okay, so I’m not one of the 2 Mega Millions jackpot winners from last night’s draw. But I’m still holding on to hope for tonight’s Powerball! hey, you never know….

If I am holding the ‘golden ticket’ for tonight’s Powerball I would definitely hunt down Brooke Shields’ people to convince her to sell her Manhattan townhouse to me. I was reading Architectural Digest online and came across Shields’ pristine, elegant, immaculate, to-die-for townhouse and fell instantly in love with it. And because I vowed to share on my blog anything that inspires me or moves me, here are photos of Brooke Shields’ beautiful NYC abode. (photos from Architectural Digest)

Unknown-3So if I do win the Powerball (lets see, what are the odds, 1 in 564,570,398 perhaps) and Brooke Shields is too emotionally attached to her home to sell it for any price (which I wouldn’t take against her, since her house is gorgeous!) then I’d buy another NYC townhouse, gut it and hire Brooke Shields’ interior decorator instead. Because everyone needs a Plan B! Just sayin’.

 

What I would do if I won the lottery

This Friday the NY Mega Millions jackpot is $190M. And on Saturday the Powerball jackpot is at $495M! Any one with a pulse should go try their luck, because after all, you gotta be in it to win it!!

Now what would I do with $170M (the cash out option) or $360M if I win either one?

For starters I would pay off all our credit card debt and student loans. Then I would pay off our mortgage and my in-laws mortgages too (because charity begins at home). I’d also give $1M to my mom and each of my eight siblings so they can go on that dream vacation they always wanted to take, or open up that small business they always secretly dreamt of. I would set aside $50M for my kids, put it in a trust fund for their future use. Then I would give my nephews and nieces $100,000 each ( I have about 24!!!), just enough money for them to enjoy, but not too much that they will become lazy and unproductive.

I would also give 3 of my closest friends $500K each as a gift of thanks for their gift of friendship.

I would then take 10% of that jackpot and donate to charitable institutions that are doing good things for women, children and the underprivileged.

With all those charitable deeds checked off of my list, I would board up my house ( I always knew this was just our starter home) and move my family to sunnier clime, possibly Miami.images-1images-4

Monster Rice Krispy Pops

Here’s a kid-friendly recipe that all you tongueincheekmomma readers can make with your toddlers.

Although its not  mess-free,  this is one mess you’d have fun cleaning up:

 

Recipe:

1 1/2 pack large-sized marshmallows

1 stick butter

5-6 cups rice krispy

green food dye

chocolate chips (for eyes)

Melt butter over low heat. Add 1 cup marshmallows.mail-3

Add rice krispies. Stir. Add a few drops green food dye until you get the desired color consistency.

Once the marshmallows are completely melted and incorporated with the rice krispies you can turn off the heat. Place your colored rice krispies on a baking tray spray coated with Pam to avoid rice krispies from sticking to your tray.

Now comes the fun part. Once its completely cool you can have the kids roll the rice krispies into balls.

Set aside. Use the remaining 1/2 cup marshmallows for the monster eyeball. Cut the marshmallows in half. Stick onto the rice krispy balls using corn syrup. Add one chocolate chip onto the center of the marshmallow eyeball to complete the eye. Add a lollipop stick and voila! 30 minutes of prepping and mess, hero mom for lifetime. Now that’s priceless.

Gearing up for travel with toddlers

If Mother Nature  was human and the month of April was her fourth child, she must have given her (and the entire spring season) the bane of passive aggressive behavior because April can’t decide if it wants to be full on spring or still hold on to winter. Each day in April you wake up to either low 50 degree temps, with cloudy, gray showers all day or a breezy sunny high 60′s teasing one into breaking out in shorts and flip-flops only for the temperature to drop back in the 40′s at nightfall.

But spring’s indecisive weather notwithstanding, those of us who can’t wait to usher in summer are done with our spring cleaning and gearing up for our summer travels.

These are my top  ’must-haves’ travel gear for families with toddlers.

1. Trunki : These lightweight, wheeled travel luggage for kids is a great carry-all. It stows easily in an airplane overhead compartment and offers plenty of space for all your kids essentials. It can also be used as a pseudo-stroller as you head from security area to your gate before boarding.

Nowadays the standard tv in front of your airline seat is not enough to hold today’s tech savvy toddlers short attention span. These ‘must-bring’s are essential in this digital age.

5. Snack Packs: For extended air travel it’s always a good idea to pack your own snacks to make sure there are no melt-downs while onboard. As I mentioned in a previous entry, try not to pack too many sugary snacks as this might lead to an out-of-control sugar-rush state that you can’t contain during a packed transatlantic flight. Here are some ideas.

Why we are the lucky ones

The luckiest generation are those of us who spent our childhood in the 70′s, was in high school in the 80′s and joined the workforce in the 90′s.

Here are the reasons why.

If you were a kid in the 70′s then chances are you grew up playing outdoors a lot. That you were content playing classic outdoor activities and games like tag, hopscotch, hide and seek, marbles, tops, kick ball and skip rope. Activities that kids these days are sadly not familiar with or don’t spend enough time engaging in.
In the 80′s we transitioned into our teens and the ‘complex’ world of  high school. Spending your high school years in the 80′s meant you were inspired by now iconic films like Sixteen Candles, Breakfast Club and Ferris Bueller’s Day Off. We had the perfect coming-of-age movies of all generations bar none! If you wanted to play video games you had to hang out with your friends at the one and only video game arcade in town.
But 80′s high school gen-ers were also fortunate enough to be in the cusp of the computer revolution. When big things were coming out of Silicon Valley we were lucky enough to benefit from the innovations in computer technology and learn rudimentary computer skills in high school. There was probably just a handful of computers in the computer lab back then, but we did get hands-on experience. Oh, we were also adept at using the now vintage manual typewriter (we even had speed- typing electives back then). So we really had the best of both worlds! Never mind that the computers were clunkier, bulkier and much, much slower versions of today’s iMacs, iPads, notebooks and laptops, it served its purpose back then.

By the time we were fully ensconced in the workforce it was the 90′s. Because we were fortunate enough to learn basic computer skills at the cusp of the dawn of the computer age it was with ease that we caught up with the newer technology.
So in this Wii, Xbox, Playstation, FB, IG, Twitter and apps ad infinitum world we live in, I feel blessed that I had a simpler, technology-less childhood. But I’m also grateful that my generation was front and center in the dawn of the computer age.

Spring/summer must-haves for a ‘diet survivor’

Seen on a NY fashionista/NY Fashion Week groupie’s IG: “Once you start making sweats or leggings your go-to outfit, that’s a sign that you’ve given up.”

I confess I am guilty. As a harried, constantly stressed and sleep deprived SAHM, I have given up on trying to look my best on a daily basis. I lived in leggings and sweats since leaving the workforce. From wearing suits almost on a daily basis, and having little to no casual, dressed down outfits, my closet has transitioned into shlubby, comfy, not so flattering sweat suits, hoodies and tees.

My mentality was I didn’t have to look good anyways when picking up my son in school, or driving him to his taekwondo classes. Or who cares about looking fashionable when I’m doing my Target or Costco run? As long as there were no (visible) holes in my sweats or leggings (I switched my outfits between these two SAHM wardrobe staples) I convinced myself I was just fine. That mindset was also partly due to my not feeling confident anymore as my weight slowly kept increasing. The weight gain I blamed on my slow metabolism. And the fact that I birthed six children. And to getting older. I gave myself plenty of excuses and just kept buying clothes that went from single digit sizes to double digits. And at 5’2″, it just didn’t look appealing.

This year brought about my year of transformation. I decided I will not give myself room for excuses and try to get back to a healthier weight. I started my diet odyssey this past February, and although I have not reached my weight goal yet, I have dropped back to single digit sized clothes and shed 22 lbs.

With this renewed confidence I’ve acquired from losing weight I promised to put in more effort to make my wardrobe more colorful and not live in my sweats and leggings anymore. A signifier of my ‘not having given up’  as my fashionista IG friend appropriately put in a nutshell.

These are some spring must-haves that will be part of my spring /summer wardrobe and a testament to surviving my diet odyssey to better health.cn6121947cn6115934

The sweet side of avocado

The article below reminded me of a conversation I had with a very narrow-minded, extremely xenophobic former co-worker. I was telling her about my culture’s love affair with avocados and how, unlike some cultures indigenous cuisines, where avocado is mostly used as an ingredient for savory dishes (think guacamole), in my native country we use avocados for sweet treats too. We love avocados so much we make it into ice-cream, ice pops and shakes. My ex-co worker nearly gagged when I said this. She was appalled at the idea of using avocado in sweet dishes, especially ice cream! She kept saying, ‘Oh how gross, imagine how much sugar they put into those things to make it taste sweet?? Ewww..Gross!!!’

Well newsflash, how does she think something as ubiquitous as vanilla ice cream is made? I guess she’s never tasted or seen a real vanilla bean, because they certainly aren’t sweet. What gives vanilla ice cream its sweetness is SUGAR! Well to some I guess ignorance is bliss. But let’s keep it real and acknowledge for a minute that this is how discrimination starts. When people do not have the ability to remain broad-minded and accepting of other peoples traditions, cuisines and cultures it drives a wedge between colors, race and nationalities. But that’s another story for another day.

Anyways I feel redeemed now that I see that educated Americans are discovering the sweet side of avocados.  As for my former co-worker, too bad you’re too close minded to try to see the beauty and richness of cultures and cuisines other than your own.

Blending the Philippines and Morocco in a Shake

“The pale celadon color announces springtime, which is one reason to whip up a lightly sweetened Filipino avocado shake, the tagaytay, that is served at Jeepney, in the East Village. But I had another motive. During last year’s family trip to Morocco, we became hooked on an avocado and almond smoothie made at a pastry shop just off the main square in Marrakesh, but could not reproduce it at home. Now, using Jeepney’s recipe, I nailed it; the key was the ice. Put half an avocado, 2 tablespoons sugar, 2 ounces coconut milk and 4 ounces whole milk in a blender with a cup of ice. Whirl and serve. For the Moroccan version, replace the two milks with almond milk. Either way, it’s cool velvet.”

Yummy Red Velvet Cupcakes

Hello to all you Tongueincheekmomma readers! I’ve been laying low on the blog because spring break kept me busy with my three munchkins, then it was back to school for my 2nd grader and I just got caught up with mommy duties.

But I’m back and to make up for my absence I’m sharing my fave red velvet recipe with all of you.

Red Velvet cake trivia: A red velvet cake was featured in the 1989 film Steel Magnolias, which led to a great resurgence of Southerners recreating the recipe for themselves. The armadillo-shaped red velvet cake served as a groom’s cake for one of the film’s main character.

Red Velvet Cake

2 1/4 cups sifted cake flour (sifted, then measured)
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 tablespoon red food coloring
1 teaspoon distilled white vinegar
1 teaspoon vanilla extract
1 1/2 cups sugar
1/2 cup (1 stick) unsalted butter, room temperature
2 large eggs

The easiest, mess-free way to transfer your batter into cupcake molds is by using a disposable pastry bag. In lieu of a pastry bag an extra large ziploc bag  also does the trick.

2 8-ounce packages cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
1 tablespoon vanilla extract
2 1/2 cups powdered sugar

(For cupcakes:* instead of cake pans just use a cupcake tray with cupcake liners. Fill each cupcake liner 3/4 full. Bake for 15-18 mins.)

Preheat oven to 350°F. Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Sift sifted flour, cocoa powder, baking powder, baking soda, and salt into medium bowl. Whisk buttermilk, food coloring, vinegar, and vanilla in small bowl to blend. Using electric mixer, beat sugar and butter in large bowl until well blended. Add eggs 1 at a time, beating until well blended after each addition. Beat in dry ingredients in 4 additions alternately with buttermilk mixture in 3 additions.

Divide batter between prepared pans. Bake cakes until tester inserted into center comes out clean, about 27 minutes. Cool in pans on racks 10 minutes. Turn cakes out onto racks; cool completely.

For frosting:Beat cream cheese and butter in large bowl until smooth. Beat in vanilla. Add powdered sugar and beat until smooth.

10 life lessons from the Walking Dead

SPOILER ALERT: FOR ALL YOU ZOMBIE FANS OUT THERE WHO HAVEN’T SEEN LAST NIGHT’S EPIC SEASON FINALE, READ THIS ONLY IF YOU DON’T MIND KNOWING WHAT HAPPENED LAST NIGHT.

Last night marked the season finale of Walking Dead. The coincidence of the Walking Dead season finale with The Bible series finale on the History Channel was like an epic battle of Good v Evil. Though both series are extremely graphic, at least in The Bible the dead didn’t turn into zombies!

The heathen that I am of course my tv was glued to AMC and I was sitting at the edge of my seat as I mourned the end of another Walking Dead Season.

In the spirit of Easter, and the rise of Jesus from the dead, here are some important life lessons I learned from the Walking Dead.

  1. Absolute power breeds corruption and evil. Even ordinary people (pre-zombie apocalypse) turn diabolical once they have a taste of power.
  2. No man is an island. As proven by Michonne, who was early on portrayed as some loner, almost mystical character. In the end even she realized that we need other people to survive. That we are all connected on some level. That opening up your heart and mind to let other people into your own space is not only a relief but downright life-saving as well.
  3. Always trust your instincts. When Tyreese and Sasha became part of the Woodbury enclave they were very careful in assessing the Governor’s actions and in the end they realized that the good guys were Rick and his group and that the Governor was as batty as they had suspected earlier.
  4. People are way scarier than zombies. I’ve always been a fan of the horror genre, but I’ve always subscribed to the idea that ghosts, ghouls and supernatural phenomena are all Hollywood-fabricated. What scares me more is watching an episode of FBI’s Ten Most Wanted, seeing pedophiles, murderers and psychopaths on the loose, in real life. I don’t know about you, but I’d rather take a chance at being face to face with a zombie if I had a sharp object I can drive through his head than be left in a room with a maniac like the Governor. After all, zombies walk in slow motion! I would have a fighting chance of surviving. The Governor on the other hand, might succeed in seducing me, then leave me in a torture chamber to be devoured by a traitorous-former-ally of his-turned zombie!
  5. Get out while you can. A classic horror movie arc is when a good guy goes back into the haunted house to save something or someone, it is inevitable that this central character ends up in a gruesome, gory death. Andrea had many opportunities to join Rick’s group, but instead foolishly chose to go back to Woodbury and the Governor.
  6. You can’t fight fire with fire. When the Governor attacked the Prison, he came fully armed to the hilt. He was ready to wage a full-on war with Rick’s group. Armed with bazookas, M-16′s, Ak-47′s and other heavy artillery, they not only out-armed Rick’s group, they also outnumbered their enemy at least at a ratio of 10:1. But Rick’s group prevailed and won the battle because they knew they couldn’t outfight their enemy, (they would’ve clearly all perished in a mano-a-mano fight), so instead they outsmarted them. Clever use of psy-war tactics was well-played by Rick’s group.
  7. You can fool some people all the time but you can’t fool all the people all the time. The Governor controlled the good people of Woodbury because he became quite adept at masking his real core and gave people a sense of security. He used their fear to manipulate them. But over time his armor was getting chipped away by Andrea, Milton and other people close to him who were beginning to see that the Governor had gone into the deep end.
  8. People change. In the end, even Merle had redeeming value. His ultimate sacrifice helped his brother Daryl and Rick defeat the Governor’s group.
  9. Love your family. Herschel and his daughters, Rick and his son and baby daughter, Daryl and *Merle, they all managed to survive because their love for family kept them alive.
  10. Always be prepared. In a zombie apocalypse make sure to have a sharp object with you in case you are thrown into a torture chamber with a zombie. (Poor Andrea had no chance…)

How I would’ve pinned my wedding (a.k.a. my fantasy wedding)

If Pinterest was available 12 years ago this is what I would’ve pinned as my fantasy wedding.

I would’ve chosen this Monique Lhuillier wedding gown for two reasons. First I wanted to wear a gown that’s made by a Filipina-American designer. Secondly, I wanted a dress made of lace. Only thing I would’ve changed was to make the lace a more off-white hue, to make it look more vintage.

Our first dozen

Twelve years ago my husband and I exchanged wedding vows in a NY courthouse with only my best friend and her husband as our witnesses. Many of our friends and family felt shunned and excluded for not being privy to our special moment and we will never live that day down.

Though I may have regrets about not having a traditional wedding, of not walking down the aisle , what we got in return, was our picket fence in the suburbs and for that I have no regrets.

You see it was our decision to forgo the fancy wedding to save up and buy a house instead. And although every so often, especially when we go to some fancy wedding, I find myself whispering to my husband, ‘don’t you wish we had a grand wedding like this?’, he always says he has no regrets.

My go-to online shops for tchotchkes

For SAHM’s (Stay at home moms) like me, the best thing about online shopping is that I can be an armchair shopper while the kids are pre-occupied (thanks Nicktoons and Wii!!).

10 things I wished I knew in my 20′s

  1. That this too shall come to pass. When I was in my 20′s every problem I had seemed like the end of the world to me. Every obstacle I encountered made me feel like a failure. I was too short sighted and inexperienced to realize that every problem has a solution.

  2. There are no shortcuts. Anything worth doing involves two investments: time and perseverance.

  3. My waistline will expand exponentially as I age. Had this been common knowledge to me back then I would’ve made exercise a daily routine so I can carry on this healthy lifestyle into my next decades.

  4. You do outgrow some of your friends. Your grade school or high school friends may not always be your lifelong BFF’s. People change, we all do.

  5. Parents are always right.

  6. People will treat you the way you allow them to treat you. You are the master of your own fate.

  7. Misery loves company. Stay away from negative vibes, negative people. Not only will they pull you down but they’re just no fun to be with.

  8. Never tell your significant other your deepest, darkest insecurities. They can and will use it against you if things turn sour in the future.

  9. I don’t know everything. I was always in a hurry to grow up. Which gave me the wrong impression of since I was a legit adult already, I knew everything I needed to know. Newsflash: You need a lot more living and real world experience to go through. No matter how tempting it is to think we know better than our elders, wisdom really does come with age.

  10. It’s never too late…to reach for your dream, to fulfill your goals.
